Could Visalus and Other Soy Products Be Destroying Your Health?!

Another quick-fix dietary supplement comes on the scene. Before you know it, it's popping up everywhere, even in the Church. While my nutrition counseling has always maintained the principle that health cannot come from diets or dietary supplements, I was not aware of the health problems that the new Visalus products were causing until a nutritional counseling friend of mine alerted me to them just recently. He said:


This past week, I had an issue brought to me by a friend that in the past I have helped to clear up some significant health problems. Unbeknownst to me, this individual decided to go a diet without telling me what they were doing. I get this panicked message stating that they went to the doctor and that the doctor was recommending they go on thyroid medication as it had nearly shut down. This person said they had been on this diet for several months and that they lost weight to start with and all of a sudden the weight loss stopped. I finally asked what the diet was and it was the evermore popular, MLM driven (I have nothing against MLM’s, however they are usually overenthusiastically sold) VISALUS soy-based protein shake.

In the past, I have discussed the dangers of unfermented soy on my health page. Contrary to popular belief, soy is NOT a health food. How it ever got promoted as such is beyond me. But I'll be honest with you; I believed this lie for a while too.

Ten years ago, I gave my second son soy formula from 6 months until his first birthday. Of course, I did so by the doctor's recommendations. Fast forward about 7 or 8 years and we decide to incorporate a little soy into our diets via tofu and textured vegetable protein (aka TVP, a dehydrated soy product that rehydrates with the texture of ground meat). Shortly thereafter, we had to take the first visit in a long time to the pediatrician's office. Our son was experiencing heart palpitations and night sweats. When we realized all of the symptoms were related to thyroid problems, I discovered that thyroid problems were often related to soy consumption.

We immediately eliminated those products from our diet and have not seen any recurrence in our son's hyperthyroid symptoms. I am thankful that God lead me to this information so early on in the problem! If this wisdom had not been revealed to us, here is a brief list of some of the additional symptoms and health problems related to soy consumption that are common:

Danger during pregnancy and nursing

Here are a few other testimonies about soy products making people sick:

"I have used soy milk for 12 years with no problems. About 9 months ago, I started to have heart palpitations. I thought maybe that I was in menopause, but I wasn’t. I added more potassium to my diet and magnesium and vitamin E. No change. I am already decaffeinated but I also took all sugar out of my diet. I lost 25 pounds and felt great except for the palpitations. I tried hawthorn and garlic but nothing was helping. Recently I came down with acute bronchitis and could only drink water because even the soy milk made me have horrendous bouts of coughing. I realized that after a few days my heart palpitations had stopped. I didn't think anything of it because it never occurred to me that soy was the culprit. As soon as I started drinking it again, my heart went crazy. I went off it for a week and then changed brands. Within 30 minutes of drinking only 4 ounces [of soy milk], my heart was all over the place. I've noticed that it takes about 24 to 36 hours for my heart to settle down. I wondered if your research turned up anything like this in regard to soy. I know it is not within the definition of an allergy, but something is definitely going on. I called the manufacturer of the soy milk, but they were of no help. I am very upset because I only drink soy milk and water. "A pregnant lady who looked very ill and was terribly deficient! She also described her son, age five, who had many allergies and infections - both were using a good deal of soy in their diet. I recommended that they discontinue the use of all soy products. At the time, I had only just run across this situation. However, a year later, I was in the same area for a lecture, and the lady invited me to dinner. She had cut out all soy products: her skin was now rosy, her face filled out, her sunken eyes normal, her black circles gone and her little boy, now six, was in greatly improved health." What about the claims that this soy is “special” and that the “bad stuff has been removed”?!

Unless soy is fermented, there are many different problems with it, no matter how "special" it is. Dr. Mercola reviews the main problems:
"Here is a summary of soy’s most glaring problems.

91 percent of soy grown in the US is genetically modified (GM). The genetic modification is done to impart resistance to the toxic herbicide Roundup. While this is meant to increase farming efficiency and provide you with less expensive soy, the downside is that your soy is loaded with this toxic pesticide. The plants also contain genes from bacteria that produce a protein that has never been part of the human food supply.

GM soy has been linked to an increase in allergies. Disturbingly, the only published human feeding study on GM foods ever conducted verified that the gene inserted into GM soy transfers into the DNA of our gut bacteria and continues to function. This means that years after you stop eating GM soy, you may still have a potentially allergenic protein continuously being produced in your intestines.

Even more frightening is the potential for GM soy to cause infertility in future generations, which has been evidenced by recent Russian research.

Soy contains natural toxins known as “anti-nutrients.”
Soy foods contain anti-nutritional factors such as saponins, soyatoxin, phytates, protease inhibitors, oxalates, goitrogens and estrogens. Some of these factors interfere with the enzymes you need to digest protein. While a small amount of anti-nutrients would not likely cause a problem, the amount of soy that many Americans are now eating is extremely high.

Soy contains hemagglutinin.
Hemagglutinin is a clot-promoting substance that causes your red blood cells to clump together. These clumped cells are unable to properly absorb and distribute oxygen to your tissues.

Soy contains goitrogens
Goitrogens are substances that block the synthesis of thyroid hormones and interfere with iodine metabolism, thereby interfering with your thyroid function.

Soy contains phytates.
Phytates (phytic acid) bind to metal ions, preventing the absorption of certain minerals, including calcium, magnesium, iron, and zinc -- all of which are co-factors for optimal biochemistry in your body. This is particularly problematic for vegetarians, because eating meat reduces the mineral-blocking effects of these phytates (so it is helpful—if you do eat soy—to also eat meat).

Soy is loaded with the isoflavones genistein and daidzein
Isoflavones are a type of phytoestrogen, which is a plant compound resembling human estrogen. These compounds mimic and sometimes block the hormone estrogen, and have been found to have adverse effects on various human tissues. Soy phytoestrogens are known to disrupt endocrine function, may cause infertility, and may promote breast cancer in women.

Drinking even two glasses of soymilk daily for one month provides enough of these compounds to alter your menstrual cycle. Although the FDA regulates estrogen-containing products, no warnings exist on soy.

Soy has toxic levels of aluminum and manganese
Soybeans are processed (by acid washing) in aluminum tanks, which can leach high levels of aluminum into the final soy product.Soy formula has up to 80 times higher manganese than is found in human breast milk.
Soy infant formula puts your baby’s health at risk.
Nearly 20 percent of U.S. infants are now fed soy formula, but the estrogens in soy can irreversibly harm your baby’s sexual development and reproductive health. Infants fed soy formula take in an estimated five birth control pills’ worth of estrogen every day.

Infants fed soy formula have up to 20,000 times the amount of estrogen in circulation as those fed other formulas!

There is also the issue of pesticides and genetic modification.
Soy foods are both heavily sprayed with pesticides and genetically modified (GM). More than 80 percent of the soy grown in the United States is GM. And more than 90 percent of American soy crops are GM.

Since the introduction of GM foods in 1996, we’ve had an upsurge in low birth weight babies, infertility, and other problems in the U.S. population, and animal studies thus far have shown devastating effects from consuming GM soy."

Even if Visalus and other soy-based products are not from genetically-modified soybeans, they still qualify as dangerous foods based on criteria numbers 2-6 above. Even organic soymilk, for instance, can cause permanent thyroid problems. As my nutritional counseling friend adds:

Most of the shakes benefits seem to be from the vitamins and minerals found in the shake and little to do with the shake itself, other than the high protein content which is also a factor. If any product description or marketing starts talking about how many apples, pears, broccoli, etc. you have to eat to compare to what it offers and it is a supposed food replacement-type product, most likely you are being scammed. What sounds so wonderful and a no-brainer is bad for your pocketbook and bad for your health.

Don't wait until you begin to have these problems yourself or hear of others who do.  People like myself and my friend who constantly get emails from people describing health problems and symptoms see this more than the average person would. As he also said:

I did receive many reports from others on Facebook who experienced very similar symptoms when they tried using it and from some who had just used soy as a major part of their vegetarian diet. This is the message I want to send is that unfermented soy and especially in the amounts recommended to be consumed by it promoters, Monsanto, vegan gurus, and protein shake MLM’s, is not only not good for you, but potentially harmful and dangerous.

I know this information may not be well-received, but I pray that it is.  I am not denying that it has helped many people lose weight.  But as Christians, we are not to idolize our physical appearance.  My goal as a nutritional counselor is to help people get healthy.  Sometimes that means losing weight and sometimes it doesn't.  But when getting thin becomes our ultimate goal, we begin to see things superficially.  

But the LORD said to Samuel, “Do not consider his appearance or his height, for I have rejected him. The LORD does not look at the things people look at. People look at the outward appearance, but the LORD looks at the heart.” 1 Samuel 16:7

No matter how much conclusive evidence comes out discussing the amazing benefits of natural foods like leafy greens with all their vitamin K, fresh fruits with all their flavanoids, and raw vegetables with all their antioxidants, it seems most people still want a quick fix. They want to be able to open a premade meal and have it be healthy.

Unfortunately, this has never worked, nor will it ever. God has designed food exactly the way it needs to be in order for it to sustain health. It takes time, effort, and major lifestyle changes in order to incorporate these foods into our lives and get rid of the foods that make up the Standard American Diet. There is no quick fix, nor will there ever be. If there was, God would already have revealed it to us. Man cannot improve on God's creation. We would be wise to remember the story of the Tower of Babel and how God is God and we are not!

As Andrew Saul, PhD and author of Doctor Yourself says,

Change your life. If you want to get better, that is what you have to do. There is no such thing as a free lunch, a quick fix, or a magic wand to cure illness. I wish there were easy answers to people’s health questions. There aren’t. There are answers, all right, but they are not easy.

To Vaccinate or Not--A Physical AND Spiritual Decision

 During the first half of November, we discussed the controversial topic of vaccination on HFFG's Facebook page.  I received many emails and Facebook messages, some good and some, well, not so good.  I have also received comments and messages looking for specific information that was posted since it can be difficult to locate on Facebook after a while.  


Consequently, I would like to summarize our discussion and include the strongest points and information in one concise blog post.  This article can be used to forward to friends who may be asking questions like those I received in many emails during that time: "What's wrong with vaccinations?" "Should I delay them?"  "Which ones are the most dangerous?" "What about herd immunity?" And so on.


But first, I'd like to remind my readers that as a parent of five children, I have been on both sides of this issue.  I blindingly and naively followed the masses on this topic for my first three children who were fully vaccinated.  I beamed with pride whenever I pulled out that fancy, up-to-date, gold vaccination card for each child. 


When our fourth child was a year old, God placed some friends in our lives that gently warned us of the dangers of vaccines.  Because our fourth son had just experienced what we believed to be a reaction to those shots, we began to look into it further.  What I've found has led me to fiercely refuse any further vaccinations.


Disclaimer: The information presented here is based on my research of this topic during the last 5 years.  I am not a healthcare practitioner and encourage every parent to make their own informed decisions based on their own research.  This is a big decision that carries not only physical effects but spiritual ones as well.  It should not be taken lightly.


Vaccines May Not Even Work
First and foremost, I think we need to examine if vaccines even work.  At the beginning of my research, I primarily studied the side effects of vaccines.  Those side effects led me to decide that I would possibly just delay vaccinations for my younger children until they were older.  This was based on the lingering assumption that vaccines work.


However, the more research I did, the more I realized that the efficacy of vaccines has never even been proven.  In fact, there are plenty of studies proving that vaccines aren't even working.  See for yourself:


In the vaccine maker's own words and mandated by the government, the flu vaccine does not even work.  The following language is taken directly from the package insert that accompanies the flu shot:
"There have been no controlled clinical studies demonstrating a decrease in influenza disease after vaccination with AFLURIA."
Not only do they have to state that they have never even conducted clinical studies proving its efficacy, but they also state that it's SAFETY for certain groups has not been proven:


"Safety and effectiveness of Influenza A (H1N1) 2009 Monovalent Vaccine have not been established in pregnant women or nursing mothers and in the pediatric population below 6 months of age."

In the words of a governmental research study:


In children under the age of two, the efficacy of inactivated vaccine was similar to placebo. It was not possible to analyze the safety of vaccines from the studies due to the lack of standardization in the information given but very little information was found on the safety of inactivated vaccines, the most commonly used vaccine, in young children.http://www.ncbi.nlm.nih.gov/pubmed/16437500

In an interview by an ex-vaccine worker, this expert says:

But, from many vaccine campaigns, we can piece together a narrative that does reveal some very disturbing things. People have been harmed. The harm is real, and it can be deep and it can mean death. The harm is NOT limited to a few cases, as we have been led to believe."
He further states:
"There were cities in England where people who were not vaccinated did not get smallpox. There were places where people who were vaccinated experienced smallpox epidemics. And smallpox was already on the decline before the vaccine was introduced."

We can clearly see from recorded outbreaks that vaccinated people are not even protected.


What About How Vaccines Save Lives?  
In order for them to work, then they should save lives.
The fact that vaccines have been saving lives for decades is usually based on two things:


1.  Medical publications/research studies
2.  History 


Let's take a deeper look at these two things:


1.  Medical Publications/Research Studies
It's true that many, many articles have been published about the efficacy of vaccinations.  Unfortunately, there is growing proof that most medical journals are financially supported by pharmaceutical companies.  Consequently, they are likely to only publish studies with favorable results.  


In order to get to the truth, it's helpful to look outside of medical journals sponsored by Big Pharma. The British Medical Journal (BMJ) conducted a rather large study to "explore the relation between study concordance, take home message, funding, and
dissemination of comparative studies assessing the effects of influenza vaccines."  


This 2009 study analyzed hundreds of studies to determine whether there was a link between study outcomes and the study's funding groups on the influenza vaccines.  Here are a few of the things they discovered:
  • 23% of the studies had missing funding information (meaning the organization funding the study was "missing").
  • "Studies partly or completely sponsored by industry, however, were published in more prestigious journals and are probably cited more, although their methodological quality and size were similar."
  • 70% of the studies "were of poor quality with overoptimistic conclusions—that is, not supported by the data presented."
The study concluded:

"Publication in prestigious journals is associated with partial or total industry funding, and this association is not explained by study quality or size."

It is no secret that most of the articles printed in medical journals are the most biased sources of information available.  Dr. Jefferson, one of the authors of the study cited above, states:
The study shows that one of the levers for accessing prestige journals is the financial size of your sponsor. Pharma sponsors order many reprints of studies supporting their products, often with in house translations into many languages. They also purchase advertising space in the journal. Many publishers openly advertise these services on their website. It is time journals made a full disclosure of their sources of funding.
However, I'm not fully convinced that this is where healthcare workers are directly getting their own information from anyway.  As the BMJ study cited above said:
Healthcare workers wanting to keep up to date with recent advances in their specialty must deal with the quantity and quality of information sources. One study estimated that every month journals publish 7287 items (studies, letters, and editorials) relevant to primary care. These would take physicians trained in epidemiology 627 hours to read and appraise. Few healthcare workers have the time and skills to carry out in depth critical appraisal of published articles.

So we'll discuss the other source of information for both healthcare workers and the general public:

2.  History 
 Many healthcare workers, as well as parents, are quick to cite historical reports of infectious diseases declining due to the introduction of immunization.  


Citing renowned physician McKeown's work, Columbia University reports that there were other factors that were much more responsible for the decline in diseases than vaccinations:


The main influences on the decline in mortality were improved nutrition. . . reduced exposure (from better hygiene). . . and, less certainly, immunization and therapy on the large number of conditions included in the miscellaneous group.  Since these three classes were responsible respectively for nearly half, one-sixth, and one-tenth of the fall in the death rate, it is probably that the advancement in nutrition was the major influence."(http://www.columbia.edu/itc/hs/pubhealth/rosner/g8965/client_edit/readings/week_2/mckinlay.pdf)
The following chart makes it clear that the rate of measles deaths in Europe gradually declined at a constant rate with improvements in sanitation, hygiene, nutrition, etc.:

Researchers at Columbia concluded the following:

In general, medical measures appear to have contributed little to the overall decline in mortality in the United States since about 1900.  More specifically, with reference to those five conditions (influenza, pneumonia, diptheria, whooping cough, and poliomyelitis) for which the decline in mortality appears to be substantial after the point of intervention--and on the unlikely assumption that all of this decline is attributable to the intervention--it is estimated that at most 3.5 percent of the total decline in mortality since 1900 could be ascribed to medical measures introduced for the diseases considered here.
It is unfortunate that doctors do not instead concentrate on nutrition which appears to play the largest role in warding off diseases.

What About Herd Immunity?
What if the whole idea of herd immunity is another big fat lie?!


"So in actual fact, the vaccinated are the ones who carry the disease and risk infecting the unvaccinated, rather than the other way around."

‎"What is certain, however, is that vaccine-induced immunity against infection does not persist throughout adulthood. We found that immunity does not even persist into early childhood in some cases. **It should be noted that the above words are DIRECTLY from the government's own organization.**

Herd Immunity Is Nothing More Than Vaccine Quotas


In the following article, the writer points out that the truth behind the concept of herd immunity is really just financial quotas:
"Section 27-8.1.7 of the Illinois Compiled Statutes (ILCS) Health examinations and immunizations law explains that if a school vaccination rate falls below 90 percent, state aid payments to that school are automatically cut by 10 percent until the school comes into 'compliance' "

What About Polio?!
Many people who get defensive about anti-vaccine campaigns vehemently bring up the cases of paralysis from polio that their family members suffered from.  To that, I recommend reading the following articles:

Vaccines Carry Dangerous Side Effects

“If vaccines were safe, manufacturers would not need federal legislation to protect them from liability. If vaccines were effective, no one would question the value of their use. If vaccines were good for us, state mandates would not be necessary to enforce them. A growing number of adults are investigating vaccines and discovering their contents.

Vaccines are grown on monkey kidneys, chicken embryos and contain bovine (cow) serum. Vaccines contain particles of viruses, bits of bacteria and measurable amounts of aluminum, gelatin, polysorbate 80, MSG and other chemicals. Side effects from vaccines can be as simple as a 3-day fever, pain and swelling on the injection site, and irritability.  They are also very likely to cause even more dangerous symptoms like permanent suppressed immune system strength.

“We have exchanged chicken pox for autism, flu for asthma, ear infections for diabetes...and the list goes on and on. In the zeal to eliminate relatively benign microbes, we have traded temporary illnesses for pervasive, life-long diseases, disorders, dysfunctions and disabilities." Dr. Sherri Tenpenny 
Research proves that children who get annual flu shots do not develop adequate T-cells and subsequent immune strength that they would otherwise develop by naturally being exposed to the flu.

In the flu vaccine insert from the FDA's (a government agency) website linked above, it states the following:
"In adults, the most common systemic adverse reactions were headache, malaise, and muscle aches."
"In children, the most common systemic adverse reactions were irritability, rhinitis, fever, cough, loss of appetite, vomiting/diarrhea, headache, muscle aches and sore throat."
Even worse than commonly giving patients the same symptoms its meant to prevent, the flu vaccine can cause far worse problems, as stated once again in the vaccine maker's own words on packet inserts mandated by the government:
"Administration of CSL’s 2010 Southern Hemisphere influenza vaccine has been associated with increased postmarketing reports of fever and febrile seizures in children predominantly below the age of 5 years as compared to previous years."(http://www.merck.com/product/usa/pi_circulars/a/afluria/afluria_pi.pdf)
"If Guillain-BarrĂ© Syndrome (GBS) has occurred within 6 weeks of previous influenza vaccination, the decision to give Influenza A (H1N1) should be based on careful consideration of the potential benefits and risks."

From other vaccine inserts (remember--as stated by the manufacturer):

"3% who received PEDIARIX and 4% who received INFANRIX, ENGERIX-B, and IPV reported new onset of a chronic illness during the period from 1 to 6 months following the last dose of study vaccines. Among the chronic illnesses reported in the subjects who received PEDIARIX, there were 4 cases of asthma and 1 case each of diabetes mellitus and chronic neutropenia. Further packet inserts for these two vaccines indicates the presence of other complications including febrile seizures.

The Hepatitis B vaccine is one of the biggest no-brainers of all!  Hepatitis B is contracted through shared needles and unprotected sex.  The vaccine carries the highest risk of death and is a ridiculous newborn hospital standard practice.

The main ingredient in the HPV vaccine now being given to young girls and boys is polysorbate 80 which caused infertility in laboratory studies.  

I read through some of 2011's vaccine adverse effects reports (http://vaers.hhs.gov/data/data/) and read a report of a young boy who experienced shriveling and shrinking of his penis immediately after receiving the HPV vaccine.  Yikes!

In the case of the rubella vaccine, researchers needed to find a "specimen" carrying the live virus. At least 26 babies' lives who would have been born healthy were carelessly and needlessly destroyed:

Preying on the fear that 20%-25% of pregnant women infected with Rubella pass it to their unborn children, possibly causing defects, doctors encouraged pregnant women to have their unborn children aborted during the 1964 epidemic. The first 26 aborted babies were unaffected.   The live rubella virus was found in the 27th killed unborn baby.


Unfortunately, many people, including Christians, are quick to dismiss this.  There are defenses thrown around such as, "The babies were not aborted for the purpose of vaccines," and "The vaccines did not cause the abortions."  


One if the most highly misunderstood notions among moral theologians and ethicists is that the abortions involved were not done with the intention of creating vaccines. 
"In order to sustain 96% of the cells, the live tissue would need to be preserved within 5 minutes of the abortion"-Dr. C. Ward Kischer..."Within one the cells would continue to deteriorate, rendering the specimens useless."
It was the intent of the abortionist and the researcher to destroy these babies specifically for vaccine manufacturing.  

Even if this wasn't the case, does that really make it okay to inject our children with products created from aborted baby's cells?! Forgive me, but I don't see where there's any gray area here.  It's basic economics--when we give our children a vaccine made from aborted fetal cells, we are financially supporting the abortion industry.

Women considering abortion are more likely to do so if they believe they can donate the fetus for research.  There are many studies to support this, including this one:

In addition to the use of aborted infants' cells, I would like to explore the Biblical warnings regarding taking a life, and the implications of doing so, since we have proven evidence from the VAERS that lives have been taken as a result of vaccinations.  This is especially not something I think healthcare workers (and parents) should take lightly.


In Exodus, God states that when a pregnant woman's baby/babies are harmed, that the one who injured the baby shall be punished with the same fate as the baby's:
“When men strive together and hit a pregnant woman, so that her children come out, but there is no harm, the one who hit her shall surely be fined, as the woman’s husband shall impose on him, and he shall pay as the judges determine. But if there is harm, then you shall pay life for life. . ." Exodus 21:22-23
When God gave Noah permission to also eat meat, He reminded him that we will each be held accountable not only for the lifeblood that we take from animals but that from people as well:
"And for your lifeblood I will surely demand an accounting. I will demand an accounting from every animal. And from each human being, too, I will demand an accounting for the life of another human being.

'Whoever sheds human blood, by human being shall their blood be shed; for in the image of God has God made humankind.' " (Genesis 9:5-6)

There is no way to guarantee that the next shot a healthcare worker gives will not be one that sheds innocent blood.

As I said in my post In Medicine We Trust, I believe much of our dependence on the medical field is based on our distrust of God and trust in the medical system.  Do we ever stop to look at how intricately and amazingly God's creation is? From our bodies to the rotation of the earth and to the tiniest microorganisms on earth, there is unlimited intelligence in every single bit of creation.  


And even though He created all these things before the fall of mankind, He created them with defenses for a fallen world in place.  


For instance, every human body has a liver which has the job of eliminating toxins out of the body.  Tonsils carry the responsibility of catching and filtering out bacteria and viruses; eyelashes carry the job of keeping out dirt and other things from the eyes; nose hairs. . . fingernails. . . the list goes on and on.


But when we doubt this intricate design, we fall under the false presupposition that His design needs our help.

Maple Pumpkin Cheesecake Without Refined Sugar!

I can't believe I forgot to finish this post with the promised pumpkin cheesecake recipe!  Honestly, I was only going to finish it if it was delicious.  It was; yet I delayed.  I'm blaming it on the busy holiday season!  But I know many of you would like to put this recipe to good use for the holiday dinners, especially those of you who are committing to the holidays without refined sugar!


I wanted to make enough cheesecake for our family of 7 to celebrate, to have leftovers, and to have a nice portion for my birthday hubby to bring to work the next day or two.  Using shallow pie pans, it ended up making 3 cheesecakes!!  If you use springform pans, it will make 2 cheesecakes.


We also wanted to make it without a conventional graham cracker crust, as almost all store-bought graham crackers have something added to them that we don't want (including the organic ones), whether it's sugar or vegetable oils.  Pastry crusts are okay but we're enjoying exploring flour-free alternatives.  Consequently, we made this with an oats/nut crust which now happens to be our all-time favorite crust.  I've included the recipe for our oats/nut crust, but you can use any crust that you like!  


Okay--I'm not a photographer and I can't even afford a decent camera, but the taste is much better than it looks!


Maple Pumpkin Cheesecake 
with Oats/Nut Crust


Makes 2 springform pan cheesecakes or 3 shallow pie pan cheesecakes 


(Adjust accordingly if you don't need to make as much as we did!)


For crusts:
3 cups rolled oats (use gluten-free oats to make it a GF pie)
2 cups walnuts
12 Tbsp (1 1/2 sticks) unsalted butter, melted*
1/2 cup honey
1/2 tsp sea salt


*Okay--it seems like a lot of butter but 1: It's for 3 pies and 2: Butter is a good fat that does not make you fat!


Preheat the oven to 350 degrees F.  Spread the oats and walnuts on separate baking sheets. Bake the walnuts about 8 minutes or until they are beginning to brown.  Remove from the oven to cool while the oats continue to bake for a total of 15 to 18 minutes.  While the oats are still baking, put the cooled walnuts into the food processor and process until they are finely ground.  Transfer to a mixing bowl.


When the oats are slightly browned, remove from the oven and let cool.  When the oats are slightly cooled, process in the food processor until they are finely ground as well.  At this point, if you have a large enough food processor, you can mix the ground oats, walnuts, and remaining ingredients back into the bowl of the processor to combine.  Since I only have a small food processor, I then transferred the ground nuts and oats to a mixing bowl to combine with remaining ingredients.  Mix well until ingredients are moist and stick together.  


Press into the bottom and sides of your pie plates/springform pans.  Bake at 350 degrees until just barely beginning to brown, about 12-14 minutes.  Remove from the oven and cool while you prepare the filling.


For the cheesecake filling:
4  8-ounce packages cream cheese, softened
4 eggs
2 cups pumpkin puree (Butternut squash puree works too.)
1 cup pure maple syrup
1 tsp cinnamon
1/2 tsp ground nutmeg
1/2 tsp powdered ginger
1 1/2 tbsp vanilla extract
1/4 cup arrowroot powder (You could also use corn starch, but please make sure it's non GMO!)


Using an electric/stand mixer, beat the cream cheese until smooth. Mix in all the remaining filling ingredients together in the order listed.  Pour into cooled pie crusts and bake at 350 degrees for about one hour (springform pans may take longer).  Remember--the secret to not having any cracks in the cheesecake is to NOT open the oven while its baking, so turn your oven light on to peek!


Let cool before transferring to the refrigerator for at least 2 hours or even overnight.  Serve as is or top with homemade whipped cream if desired (a pint of heavy whipping cream whipped and add honey, maple syrup or stevia and vanilla extract).

From All-Natural to Class-A Drug: How Refinement Processes Makes Cocaine, Heroine & Sugar

When our family began transitioning our lifestyle to whole foods over five years ago, cutting out sugar was not something I thought was necessary.  Instead, I purchased organic sugars and foods made with organic sugars.  I thought I was making the healthy choice!  Can anybody relate?!


The more I researched, however, the more I saw the negative effects any refined sugar has on our bodies.  I slowly began to see it apart from our culture's view on it.  


The final straw for me, however, was reading Dr. Weston A. Price's book Nutrition and Physical Degeneration.  In the 1930's, Dr. Price and his wife traveled around the world looking for primitive races of people living off of only native foods.  


These indigenous tribes enjoyed absolutely wonderful health, mentally and physically.  They did not have doctors, psychologists, or dentists.  They didn't need them!  And Dr. Price noticed the mild-mannered nature of the children who never cried or ran around wildly.


In every society, the introduction of trade routes brought along one common denominator: sugar.  These tribes began eating jams, pastries, refined flour, and canned vegetables.  Not surprisingly, they began coming down with tuberculosis, tooth decay, and other health problems.  


Surprising to me, however, was that indigenous women who converted to this "modernized" diet began giving birth to children who would have decreased bone mass (including in their skull) and reduced jaw/facial bone sizes.  This change caused them to have inadequate space in their mouth for all of their teeth, causing crowding and painful eruption of their third molars (wisdom teeth).  


This shook me up.  I had known that sugar was bad.  I had already eliminated it completely from our family's lives by the time I read this book.  (With the exception of using it to make kombucha, with which the sugar is consumed during the fermentation process.)  But I didn't know that its effects carried through to the next generation.

As I faced endless orthodontist appointments for my teenage son's crooked teeth and my daughter's beautiful baby smile began changing to crooked adult teeth, I began thinking about this product considered as "food" and wondered how something that causes so much damage could be so prevalent in our food supply.  


Then I saw an article detailing a study of laboratory rats and the addictiveness of sugar.  By providing both cocaine and refined sugar to these rats, it was discovered that the sugar was three times more addictive than cocaine.  

94 percent of rats who were allowed to choose mutually-exclusively between sugar water and cocaine, chose sugar. Even rats who were addicted to cocaine quickly switched their preference to sugar, once it was offered as a choice. The rats were also more willing to work for sugar than for cocaine. Oh really? I had to check into this myself.  I thought it might be a little too far-reaching.  You won't believe what I found.  I didn't!  


First, let me take you through the process of converting various natural products into what is now considered a Class A drug.  We'll start with coca leaves into cocaine.


From Coca Plants to Cocaine



The coca plant has been chewed by the natives of Peru and Bolivia for over 2,000 years and was reputed to act as a stimulant, aid to digestion, aphrodisiac and life-extender.  To this day, indigenous tribes continue chew on the leaves for its nutritional and mild psychological benefits.


When the creator of Coca Cola, John Stith Pemberton, originally used coca leaves to make a new popular drink, he chose ingredients that would replace his morphine addiction with something else.  Many physicians at the time had the same morphine addiction problem that he did.  


After working long hours in a secretive lab, he developed the drink today known as Coca Cola.  Unfortunately, the drink was only another addictive alternative to the morphine addiction.  Pemberton eventually died of cancer and his morphine use.  His son, whom he wanted so badly to leave some of his fortune to, also died just six years after Pemberton's death of morphine addiction.  (http://cocaine.org/coca-cola/index.html)

So essentially, Coca Cola was created by a druggist through many chemical processes in an attempt to make an addictive drink that would sell successfully.  



The process of converting coca leaves to cocaine was difficult at first.  Coca leaves exchanged chemists' hands a few times before the process of isolating the cocaine alkaloid was pinpointed.  Afterwards, its use became popular in medicine as an anesthetic, including its marketing for children's toothaches!


In order to mass-refine this product, the process now goes something like this:
The leaves were dried for half a day, then chopped into small pieces with a strimmer and sprinkled with a small amount of powdered cement (replacing sodium carbonate from former times). Several hundred pounds of this mixture was soaked in 50 US gallons (190 L) of gasoline for a day, then the gasoline was removed and the leaves were pressed for remaining liquid, after which they could be discarded. Then battery acid (weak sulfuric acid) was used, one bucket per 25 kilograms of leaves, to create a phase separation in which the cocaine free base in the gasoline was acidified and extracted into a few buckets of "murky-looking smelly liquid". Once powdered caustic soda was added to this, the cocaine precipitated and could be removed by filtration through a cloth. The resulting material, when dried, was termed pasta and sold by the farmer. The 3750 pound yearly harvest of leaves from a hectare produced 2.5 kg (6 lb) of pasta, approximately 40–60% cocaine. Repeated recrystallization from solvents, producing pasta lavada and eventually crystalline cocaine, were performed at specialized laboratories after the sale.

The refined product is now used illegally as a stimulant.  I personally knew a couple of people who were addicted to this drug. They reported the desired benefits of giving them energy to do housework and other responsibilities for which they otherwise could not find the energy.


While coca leaves and coca tea continue to be enjoyed legally in many countries for its mild psychological effects and nutritional properties, this natural product constantly comes under fire because of its refined drug byproduct.



The physical health effects of cocaine include heart/lung problems (especially with smoking cocaine), mineral deficiencies, brain cell degeneration, and increased risk of autoimmune disorders.
Additionally, stimulants like cocaine, methamphetamine, and even caffeine cause dehydration and dry mouth. Since saliva is an important mechanism in maintaining one's oral pH level, chronic stimulant abusers who do not hydrate sufficiently may experience demineralization of their teeth due to the pH of the tooth surface dropping too low . So basically, it gives you energy whereby you soon crash, and in the process causes mineral deficiencies, a weakened immune system, bad teeth, and the need for more.

Sound familiar yet? Okay. . . moving on. . .

From Poppy Flowers to Heroin/Opium
Like cocaine, heroin has all-natural beginnings and only becomes a drug through the process of extraction.  Opium poppies, also called the 'flower of joy', are grown mostly by impoverished farmers on small plots of land in warm, dry climates from Turkey through Laos, and now also grown in Colombia.


The process goes a little something like this:
"About three months after the poppy seeds are planted, brightly-colored flowers bloom at the tips of the greenish, tubular stems.  As the petals fall away, they expose an egg-shaped seed pod.  Inside the pod is an opaque, milky sap.  This is opium in its crudest form."

The sap is extracted by slitting the pod vertically in parallel strokes with a special curved knife. As the sap oozes out, it turns darker and thicker, forming a brownish-black gum. A farmer collects the gum with a scraping knife, bundles it into bricks, cakes or balls and wraps them in a simple material such as plastic or leaves.Then the opium enters the black market." From there, the opium undergoes more refinement in a way very similar to sugar, where the dark heavy stuff sinks to the bottom and white crystals are separated at the top.  The white crystals are drawn off, then treated with ammonia (same as sugar except sugar is treated with chlorine), and a few more tweaks to get the final drug.

From Sugarcane (or beets) to Sugar
Bags of sugar and products laden with sugar can boast the claim "all-natural." Made from either sugar cane or sugar beets, this white powder was once considered a luxury that only the wealthy could afford.
Sugar has been produced in the Indian subcontinent[4] since ancient times. It was not plentiful or cheap in early times—honey was more often used for sweetening in most parts of the world.

Originally, the refinement process was minimal compared to today's process and actually retained some of its nutrients. Today, however, the process to make sugar crystals (aka evaporated cane juice) from sugar cane is lengthy and involves various chemical washings, heat, centrifuges, and chemical additives. 

 The sugar percentage goes from 15% to 60% in this process, making it unnaturally sweet and containing none of the original fiber meant to help slow the absorption of the 15% sugar content into the bloodstream, and containing virtually none of the original nutrients.



It takes approximately 15 feet of sugarcane to provide the amount of refined sugar in one 12-ounce can of soda. 


The effects of sugar on one's health is lengthy as well, and starts with bone and dental deformities (especially when consumed during pregnancy), mineral deficiencies, and suppressed immune function.  
In a study reported in the American Journal of Clinical Nutrition as far back as 1977 reported the adverse that sugar has on the immune system. Blood was drawn from subjects and the activity of the white blood cells that neutralize viruses and bacteria was observed and calculated. The white blood cell activity was calculated before and after subjects were given various doses of sugar: 6, 12, 18 and 24 teaspoons, respectively. Each subsequently higher dose of sugar created a corresponding decrease in the activities of the subject’s white blood cells. The group that had consumed the largest amount of sugar had essentially no functioning white blood cells within an hour after consuming the sugar. The immunosuppression occurred for up to two hours after consuming that sugar, but the adverse effects of no blood cell activity persisted in some instances for up to five hours

Refined sugar causes the liver to store up fat, resulting in reduced liver and kidney function.  The mineral deficiencies caused by sugar include a major loss of magnesium which is responsible for keeping blood vessels open.  


Long-term effects include depression, addiction, autoimmune diseases such as diabetes, high blood pressure, heart disease, stroke, and cancer.  In fact, it is commonly known that cancer cells need sugar in order to survive, so eating sugar just invites cancerous cells to grow and thrive.



Sugar increases production of serotonin in your brain, the "feel-good" neurotransmitter.  But then when blood sugar drops, serotonin drops and the body begins the withdrawal process, creating cravings for more.


Sugar also releases opioids, just like opium and heroin.  Opioids bind to brain receptors, triggering feelings of pleasure and well-being.





To Sum It Up. . .
At this point, I'm hoping you'll see the striking similarities between these three products with all-natural beginnings.  They start out in the beautiful form designed by our Creator and are then taken through a lengthy, unnatural chemical process to produce little white crystals that have a pleasurable effect on our emotions, give us energy, and cause addiction.  


One of the main issues I take with this ingredient is its marketing as an all-natural ingredient.  And the public's subsequent belief of that marketing.

This marketing lie has caused millions of people to be addicted to this "legal" and socially acceptable Class A drug, including myself at one point!  

The Church, for instance, would never allow cocaine or heroin to be distributed within its walls, but hands out sugar-laden products in common areas and the children's classrooms.


Sugar's addictiveness and ill effects on our health carries many spiritual implications with it as well. Being addicted to anything causes a professing Christian to be led by something other than God.  According to God's word, this is idolatry.  


Furthermore, we are called to be good stewards of our bodies, these living temples of the one true God.  We are called to be warriors for the kingdom of God and to "Live such good lives among the pagans that, though they accuse you of doing wrong, they may see your good deeds and glorify God. . ." 1 Peter 2:12.



In my work as a nutrition counselor and wellness educator, I've had many, many Christians confide with me about their health issues and lack of energy. These beaten-down, fatigued, depressed bodies can do nowhere near what they could be doing for the Kingdom if they had physical energy, emotional strength, and good health, nor is it an example of abundant living in Christ.

I'm not saying that we won't experience disease and sickness. I am, however, saying that we should not put the Lord our God to the test. We shouldn't be addicted to any drugs, including sugar, so that we may wholeheartedly follow after Christ and Christ alone.

Please know that this is not meant to be a judgmental attack. This is a call out to all Christians to see this drug for what it is. Take a good look at what it does to your health and your mind. Pray about it and ask God to give you wisdom and discernment on this issue, rather than looking at it the way the world does or with addictive pretenses.

Why? Because Jesus is coming someday, and He'll be looking for those whose hearts are fully committed to Him!  And because He has eternal rewards for those who run the race and stay committed to Him!
Do you not know that in a race all the runners run, but only one receives the prize? So run that you may obtain it. Every athlete exercises self-control in all things. They do it to receive a perishable wreath, but we an imperishable. So I do not run aimlessly; I do not box as one beating the air. But I discipline my body and keep it under control, lest after preaching to others I myself should be disqualified. (1 Corinthians 9:24-27 ESV)

And because as Lysa TerKeurst says in Made to Crave,

You were made for more!
