Want a great, healthy, sugar-free spread for toast? Give homemade prune jam a try! It tastes better than you might think and one bite will get rid of any false notions you may have about prunes! We just made some and it is delicious! This recipe makes quite a bit--enough for a medium jar--double, triple, or more to make enough for freezing/canning.
2 cups orange juice
3 cups prunes (pitted, sulfite-free, I got mine from TJ's)
Put both ingredients in a small saucepan and bring to a boil. Once it boils, cover, turn off heat, and let steep for 30 minutes. Using either an immersion blender or food processor, blend until the consistency of apple butter/jam. Yummy!

How long does this last in the fridge, or does it never go bad because your family eats it up quickly? :)
LOL--It never does really last that long around here, but we have had a jar that got shoved to the back and we forgot about it. I think it was in there almost 2 weeks and then we ate it up, so I'm guessing it would be okay until 2 weeks but not sure I'd let it go any longer:)
