Isn't It Obsessive to Think About Food All the Time?




My kids and I were reading about native African tribes for school one day.  Like many other traditional cultures, the Maasai people of Africa are nomads.  They move around constantly in order to provide fresh new food for their cattle, who one day become their food.  Their children never have stable homes and they are completely dependent on the weather and their ability to find fresh food.

This ancient way of life has worked for them for thousands of years.  That is, however, until recently.  "Since the colonial period, most of what used to be Maasai land has been taken over, for private farms and ranches, for government projects or for wildlife parks. Mostly they retain only the dryest and least fertile areas. The stress this causes to their herds has often been aggravated by attempts made by governments to 'develop' the Maasai. These are based on the idea that they keep too much cattle for the land. However, they are in fact very efficient livestock producers and rarely have more animals than they need or the land can carry." 


"These 'development' efforts try to change their system of shared access to land. While this has suited outsiders and some entrepreneurial Maasai who have been able to acquire land for themselves or sell it off, it has often denuded the soil and brought poverty to the majority of Maasai, who are left with too little and only the worst land."

The Tuareg tribe of Africa is another group of people we learned about.  They distinguish themselves in many very interesting ways, including the way they dye their clothing with indigo dyes which is why they are often called the Blue people.  Their daily lives revolve around maintaining a food supply as their livestock graze fresh fields and other daily chores:


"Women process milk, make butter, prepare animal skins, make clothes and bedding from skin, collect firewood and water.  Men drive the animals take responsibility for selling. Men will take camels to towns to sell them, returning with millet which they use as flour for bread making." 


Unfortunately, the government and worldwide bureaucracy is threatening their way of life just as it is for the Maasai and many other tribes.  As one site says, "In recent times the Tuareg have been abandoning their nomadic way of life and take up sedentary lifestyles. Drought and government policy are threatening their traditional way of life but Tuaregs and their camel-caravans still appear unexpectedly on the horizon before melting into the desert again."

The Prairie Primer: Literature Based Unit Studies Utilizing the "Little House" SeriesOur kids also love to read the Little House on the Prairie books for school.  We have a great unit study curriculum that helps us use these books to learn things about geography, science, Bible lessons, character qualities, and more. We've used these books to experience adventures such as making homemade butter, learning how maple syrup is harvested, and so many more fun things.  I guess deep down, I would love to have lived in such simpler times.


So where am I going with all of this?  Yes, some of you are seeing where I'm headed.  Many media outlets have coined a term for people who are "obsessed with health food": Orthorexia.  This term is likened to conditions such as anorexia where people become so obsessed with something having to do with food that they ironically put their own health in danger.  (http://abcnews.go.com/Health/Stossel/story?id=5735592&page=2)  Many of you can imagine that I've been accused of having a mild form of this.  Maybe some of you have even thought it!  (BTW: That's okay--I don't mind having people care enough to remind me to stay balanced!)

However, I do wonder if the accusers ever took a history class?  Did they ever learn about Pa Ingalls spending all fall smoking meat while Ma cultured cheese and hung onions to dry in the attic?  Did they read about the long hours Pa spent hunting while Ma made butter and cooked stew over the fireplace all day long?  How they spent days harvesting wheat and even more days threshing and grinding?  I wonder if anyone ever accused them of being obsessive. . .


As we can see from the above examples of African tribes, profit and greed from their government has stripped them of their ancient practices.  These tribes suffer not because of lack of rainfall or a livestock plague but because of other humankind.  I personally do not see any difference in modern-day America.  People who choose to fill up their schedules with extracurricular activities, shopping, and lying around watching television accuse those of us who work hard to seek traditional lifestyles of being obsessive.  They say that because these money-hungry companies make it simple for us to get "food," that we are crazy not to buy into it.  (Sorry to be the bearer of bad news but these companies do not have our best interests at heart.)

In the same way it costs the nomad tribes of Africa and many other cultures, Convenience is costing us more than our money.


But there is a fraction of truth in everything, right?!  If you read the article linked above about Orthorexia, you can see a couple of examples of people who took it WAY too far.  Not only did they chart their food intake, but they actually let themselves physically deteriorate to the point of DEATH.  They were driven by fear.  Ironically, that fear actually led them to the same fate, just on a different route.

From the words of a wise Dreamworks character, "One often meets his destiny on the road he takes to avoid it."  (Kung Fu Panda's Master Oogway).


It's true that our family hasn't had a single fast-food burger or french fry in over five years.  And we don't plan on having one anytime soon.  But we did have Papa John's pizza for dinner two weeks ago.  After cooking three homemade meals a day from scratch, ordering out one night a month can be a blessing to this hard-working mom!

If you are seeking a healthy lifestyle for your family as a way to honor God and to be a good steward of the body He has given you, I commend you.  I also encourage you to seek Him, above all else, before anything!  When you do that first, and maintain your temple well, you will not be worn down by fatigue and depression.  You will have energy to be a mighty warrior for the Kingdom of God here on earth while the time for our Savior's return draws near!  And once in a while, order pizza and give yourself a break!

Supplements Simplified


Over on my Facebook health page, we've started discussing children's health after finishing up our discussion on lawn chemicals.  As we discuss prenatal health, we've touched on various supplements that most natural health experts consider very helpful.  But figuring out which supplements to take when you're on a budget can be difficult.  The vitamin and supplement aisle is long and there are so many differences between the products.  And in many cases, it's hard to know how much to take of something!

So in an effort to help some of you along, I'm going to sum this up in a nutshell with what I've learned and researched.  The following are the top 3 supplements that experts such as Dr. Oz and Dr. Mercola recommend the most for prenatal, infant's, and children's health.  I am posting links to these products here for a couple of reasons:

1.  For your convenience.  I find ordering online can make life so much easier!
2.  For our homeschool.  A small portion of any purchases made through these links goes towards helping us buy books for our home education:)
3.  For visual reasons.  I hope that seeing what these products look like will help you identify them should you choose to purchase them at your local natural health store.

VITAMIN D


Okay, now that we got the legal stuff out of the way, I have to start with Vitamin D--the most crucial supplement EVER in my opinion.  Dr. Mercola, one of the country's leading natural health experts, agrees that if you're going to take one supplement, this is the one.  Aside from strengthening your immune system, this nutrient is essential for long-term health.  In fact, studies show that many diseases like cancer and diabetes can be prevented simply by taking adequate amounts of vitamin D!   60 percent of people with type 2 diabetes have vitamin D deficiency.


A study by Dr. William Grant, Ph.D., internationally recognized research scientist and vitamin D expert, found that about 30 percent of cancer deaths -- which amounts to 2 million worldwide and 200,000 in the United States -- could be prevented each year with higher levels of vitamin D.

Another study also suggests that low vitamin D is associated with Parkinson’s disease. The majority (55 percent) of Parkinson's disease patients in the study had insufficient levels of vitamin D. 




When it comes to prenatal health, adequate vitamin D intake (both from sun exposure and a natural supplement)  appears to provide even more benefits to both Mom and baby.  A 2009 study on vitamin D deficiency in newborns withacute lower respiratory infection (ALRI) confirmed a strong, positive correlation between newborns’ and mother’s vitamin D levels. Over 87 percent of all newborns and over 67 percent of all mothers had vitamin D levels lower than20 ng/ml, which is a severe deficiency state. 

Newborns with vitamin D deficiency appear to have an increased risk ofdeveloping ALRI, and since the child’s vitamin D level strongly correlates withits mother’s, the researchers recommend that all mothers’ optimize their vitamin D levels during pregnancy, especially in the winter months, to safeguard their baby’s health.

Another 2009 report in the journal Pediatric Researchstated that infants and children appear more susceptible to viral rather than bacterial infections when deficient in vitamin D. And that, based on the available evidence showing a strong connection between vitamin D, infections,and immune function in children, vitamin D supplementation may be a valuable therapy in pediatric medicine.
Meanwhile, the American Academy of Pediatrics has doubled its recommendation for a daily dose of vitamin D in children, in the hopes of preventing rickets and promoting other health benefits.

The new guidelines now call for children to receive 400 international units (IU) of vitamin D per day, beginning in the first few days of life.

“ … Evidence has shown this could have life-long health benefits," said Dr. Frank Greer of the American Academy of Pediatrics.  



Dr. Mercola, however, says, "So even though the American Academy of Pediatrics just announced that they’re doubling the RDA of vitamin D for children to 400 IU, their new guidance still falls absurdly short of what’s needed to keep kids healthy."

So how much should you take?  And which one?  Here are Dr. Mercola's guidelines for Vitamin D supplements, as well as some of our favorite products.  

Vitamin D Dose Recommendations Age Dosage 
Below 5:  35 units per pound per day 
Age 5 - 10:  2500 units 
Adults: 5000 units 
Pregnant Women:  5000 units 

(WARNING:
There is no way to know if the above recommendations are correct. The ONLY way to know is to test your blood. You might need 4-5 times the amount recommended above. Ideally your blood level of 25 OH D should be 60ng/ml.)

The most important thing to keep in mind if you opt for oral supplementation is that you only want to supplement with natural vitamin D3 (cholecalciferol), which is human vitamin D. Do NOT use the synthetic and highly inferior vitamin D2

Carlson Labs makes an excellent Baby Vitamin D drop supplement that tastes good and is extremely easy to use.  For breastfed babies, a drop on mommy's nipple before baby eats is a quick and easy way to get baby their daily dose!





Even though the Nutrition Now Vitamin D Gummy Adult vitamins say that they're for adults, I buy these for my kids.  I do this because using the guidelines above, children ages 5-10 should actually have two of these gummies per day (if they are not taking any other source of Vitamin D such as cod liver oil).






During pregnancy, you will have to take into consideration the amount of Vitamin D your prenatal vitamin has before taking a separate D supplement.  My favorite prenatal vitamin is Garden of Life's Vitamin Code RAW Prenatal formula.  It is expensive but definitely worth it.  In addition to containing the nutrients found in other prenatal supplements, it also has probiotics, ginger for morning sickness, a blend of organic raw sprout, and raw fruit and vegetables.  You can't beat that!  


Do not forget to try and get at least 15 minutes of sun exposure each day for God's natural Vitamin D too!





FISH OIL/COD LIVER OIL


I've also been discussing Omega 3's and supplements on my Facebook page lately.  Essential fatty acids, such as those found in fish and cod liver oil, are essential during pregnancy as they provide vital food for baby's growing brain.  Without adequate fat intake, a growing baby will draw this nutrient from mother's brain, causing postpartum brain fog and memory problems for mom.

According to the Weston A. Price Foundation, "The fetus hoards DHA from the mother and incorporates it into its brain at ten times the rate at which it can synthesize it."

A deficiency of essential fatty acids in the womb is also a known contributing factor to hyperactivity, and focus and learning problems in children:

"Rats that are fed cod liver oil during pregnancy give birth to offspring that have higher cognitive performance than controls at six months. If rats are fed a protein-deficient diet during pregnancy, their offspring have disturbed glucose metabolism; if they are also fed cod liver oil, however, the glucose metabolism of their offspring is normal.42"


The benefits of cod liver oil during pregnancy have been verified in humans as well. Use of cod liver oil during pregnancy is independently associated with birth weight.43 A double-blind, placebo- controlled study showed the use of cod liver oil during pregnancy and lactation to increase the child’s IQ at the age of four years. In this study, the control group received the same amount of fat-soluble vitamins as the cod liver oil group, so the effects are most likely due to the DHA.44 In Norway, use of cod liver oil during pregnancy was associated with a 70 percent reduced risk of type 1 diabetes.45
So What's the Difference?
Cod liver oil and fish oil have a crucial difference that you must understand before taking them.  They both contain essential fatty acids DHA.  Unlike fish oil, cod liver also naturally contains vitamins A and D.  If you take cod liver oil, you may need to adjust your intake of other supplements to make sure you do not get too much of either of those vitamins.  
So How Much?
The Weston A. Price Foundation recommends 20,000 IU of vitamin A and 2,000 IU of vitamin D from cod liver oil during pregnancy. This can be obtained from 1¾ teaspoons of the high-vitamin variety. This amount also supplies about two grams of omega-3 fatty acids—the same amount shown in one study to prevent premature delivery.
(Remember these amounts do not take into account additional nutrients, such as that found in prenatal vitamins, of Vitamins A and D.  If you are not comfortable calculating these amounts, I would recommend simply taking a fish oil supplement in addition to a good prenatal supplement and  extra Vitamin D.)
There are many brands of cod liver oil that my research and experience has proven to be worth the money.  Carlson Labs has many different kinds and flavors and is rated as a top producer.  They have flavored cod liver oils that are MUCH easier to get kids to take!  (A friend of mine uses lemon-flavored; we use Twinlabs Cherry flavored.)  In addition to TwinLabs, some friends of mine also recommend Nordic Naturals Cod Liver Oil.  






If you are opting to go with regular fish oil, you can go with a lemon-flavored liquid or a softgel which is a bit easier to go down!

Probiotics
Finally, we come to probiotics and the importance of good gut health.  In his book, The Maker's Diet, Jordan S. Rubin describes how gut health (or lack thereof) can determinen our overall health.  It is the best description of this area of our health that I've ever read. 

Did you know that there are nearly one hundred million nerve cells in the gut alone--about the same number found in the spinal cord?!  This large amount of nerve cells actually gives us the reason why a person's capacity for feeling and emotional expression depends primarily on the gut.  Bad gut health means bad mental health.  In the book of the Bible Song of Solomon 5:4, it says, "My beloved put in his hand by the hole of the door, and my bowels were moved for him."  Okay, I know that sounds weird, but follow me.  According to scripture, the "bowels" or "belly" is actually the seat of emotion.  Thousands of years ago, they knew what educated "Americans" fail to realize.  

Most people with health conditions affecting the brain such as Alzheimer's, Parkinson's and autism also suffer from intestinal problems like constipation.  Gut health and the central nervous system are very much linked.  

Gut health is also crucial for a strong immune system.  And in a world where food that cannot be properly digested is the standard diet and antibiotics are in our food and medicine, bad bacteria proliferates in the average American's gut.  The list goes on!  Rubin says in his book, "Virtually every state of health is affected by the GI tract.  Even if you break a bone or undergo a surgical procedure, the time required to heal is directly affected by how well your gut is able to process nutrients and detoxify toxins!"

So how much and which ones?
There are many ways you can get a daily source of probiotics.  My personal preference is making homemade kefir from raw milk.  This ancient practice is still used regularly in many countries and provides more probiotics than any other source.  It is used by AIDS patients to strengthen their immune system.

To make it at home, you can either order kefir grains (which you will use over and over for years) or purchase kefir starter (which you can only use once). Kefir grains come with complete instructions.   










If this process intimidates you, check your local store's refrigerated organic dairy section for kefir.  I highly recommend purchasing the plain variety as the flavored varieties contain a large amount of sugar.  The most delicious way to drink it is in a smoothie.  Throw some fresh and frozen fruit in a blender with 4 to 6 ounces of kefir (per person) and add in whatever else you like for good health (greens, coconut oil, flaxseed, psylium husk, etc.).   

Yogurt is another good option, but keep in mind that it will not give you nearly the number of good bacteria as kefir.  It is, however, much easier to obtain.  And just the same, I recommend buying plain, unsweetened yogurt due to the sugar content of flavored kinds.  You can also make your own yogurt at home.  I do it in the crockpot!  You will need raw milk, yogurt starter, and a slow-cooker.  I use this recipe: http://www.nourishingdays.com/2009/02/make-yogurt-in-your-crock-pot/.   

This will save you a lot of money, but remember that store-bought yogurt has a hefty amount of thickener added to it (cornstarch, powdered milk, and other nutrient-lacking fillers), so homemade yogurt is much thinner.  

And remember--people who are lactose-intolerant are often still able to tolerate yogurt and kefir.  



Finally, an acidophilus supplement is a good way to get your daily probiotics without all the fuss.  There are many that are dairy-free and gluten-free for those with allergies and sensitives.  But if you have an allergy, read the label clearly before you select one.

What does the Vietnam War have to do with lawn chemicals?

What do the words Agent Orange, PCB, rBST, aspartame, GMO’s, and Roundup have in common?  Each one of these toxic, man-made chemicals are (or were) produced by the company Monsanto.  But to know why this common denominator is important, one must first know what each of these things is.  Stick with me here and read to the end to see what we can learn about our lawns from the Vietnam War.


If you’ve never see pictures showing the damage done by Agent Orange, you have had the pleasure of not ever having these visions haunt you.  (Please don’t look them up.  That is why I did not post one on this blog.)  During the Vietnam War, the American military used a chemical concoction produced by Monsanto and named Agent Orange to defoliate trees and destroy rice fields for military purposes.  This chemical concoction contains dioxin, one of the most dangerous chemicals known to man.  (Side note: dioxin is also found in disposable diapers, tampons, etc.)  It is recognized by the World Health Organization as a carcinogen (causes cancer) and by the American Academy of Medicine as a teratogen (causes birth defects).

The animals living in these Vietnamese forests were subsequently extinct.  The forests and jungles may never grow back and if they do, they will take 50 to 200 years to regenerate.

But worst of all, Vietnamese people and subsequent generations have been and continue to be afflicted by this chemical with horrible deformations; extremely high rates of cancer, infertility and miscarriages (often accompanied by severe hemorrhaging); liver and heart diseases, and more.  Birth defects were extremely common and continue to be as residues of this chemical remain.

I grew up with a girl who was born with only one arm.  In the spot where her left arm should have been, there were two undeveloped finger-like appendages hanging out of her shoulder.   Although she was never anywhere near Vietnam, her dad served in the military during the Vietnam War and during the use of Agent Orange before she was conceived.   Because of similar stories told by fellow soldiers, her parents are convinced that her birth defect was a result of her dad’s chemical exposure.

Testimonies from those affected in Vietnam at a trial report seeing babies born without arms, legs, a brain chamber, or even a face.  One woman reported a case of another woman giving birth to a “ball” with no human form.  Side effects of this chemical continue to carry on to each generation.  As reports of 3rd generation war relatives continue to be born with severe birth defects, Vietnamese people are wondering how long the tainted genes will continue through their family line.

The U.S. government and these chemical companies involved, one being Monsanto of course, were found guilty of war crimes, crimes against humanity, and ecocide during the illegal U.S. war of aggression in Vietnam.  Lawsuits were filed and victorious over Monsanto but the few victims that received recompense each received measly amounts that do not come close to covering the damages inflicted on them and their families.

RBST/rBGH

Do you know that little tiny disclaimer on certain dairy products that say, “Milk from cows not treated with rBGH has not been proven to show significant differences”?  That information was based on a study that was sponsored by, yep, you guessed it--Monsanto.  And the FDA has made this labeling a requirement based solely on the Monsanto-sponsored study.

Also known as rBGH, this synthetic hormone created by Monsanto is injected into cows to increase milk production.  Cows given this synthetic version of a natural hormone are often afflicted with mastitis (infections in the mammary glands), which then also requires the regular use of antibiotics.  Injected with the hormone every 14 days, these cows have an average lifespan of about 5 years or less, compared to the lifespan of 20-25 years in normal cows.

The use of this synthetic hormone is banned in many European countries, Australia, and New Zealand.   All for the sake of profit, this biologically active hormone is increasing in use in America.  Its use is associated with increased rates of breast cancer, prostate cancer, lung cancer, and colon cancers.

Aspartame

Most of us are familiar with the term aspartame by now, but some may also know it as NutraSweet.  It was accidentally discovered in a lab and while its use was somewhat small at first, it became a large part of the market after Monsanto took over and promoted its “zero-calorie” pitch.   The company that first produced this “zero-calorie” sweetener was purchased by Monsanto in 1984, sold for 16 years under their company, and subsequently sold it in 2000 after patents expired and the market become too difficult to monopolize.

This product is linked to an increase in conditions such as Lupus, Alzheimer’s, seizures, brain tumors, and of course, cancer.  It is found in more than just diet sodas today.  Many products labeled as “sugar-free,” such as powder drink mixes, also contain aspartame.

PCB’s
This chemical was created and sold by Monsanto  for use in various things during the 1960’s and 1970’s.  Once the dangerous side effects of this chemical was discovered, its use was banned and it was eventually phased out.  Unfortunately, deposits of this chemical from both dumping sites and leaching of old products containing it continue to cause problems.

For instance, towns where residues of this chemical is found in high amounts are areas that also have abnormally high rates of cancer.  In fact, Monsanto has been sued many times for illegal dumping.

GMO’s

GMO’s, or Genetically Modified Organisms, are something you may be familiar with by now if you’ve been following me on face book.  Essentially, Monsanto has created plant seeds that are injected with a biochemical protein to help the plant reject herbicides.  This allows farmers to treat their fields with an herbicide designed to kill every living thing but because of its molecular alteration, it does not kill the plant.

As of 2007, approximately 91 percent of soy found in food is genetically modified .  In 1996, it was only 2 percent.  If you consider that almost every chip, cracker, and crunchy thing is deep-fried in soybean oil, you can begin to see how much of the food Monsanto has chemically altered.  With this staggering increase in genetically modified production, you will also see a staggering increase in food allergies, especially from soy.

73 percent of corn (think of all the high-fructose corn syrup) crops are genetically modified, and 87 percent of cotton (think of your clothing) is from genetically modified crops.  These beautiful plants that look natural from the outside are no longer natural.  They are altered on a molecular level and have now become Franken-food that almost every single American consumes.

Of course, anytime you alter the way things are naturally meant to be, there are consequences.  One study analyzing the effects of genetically modified foods showed evidence of damage to the immune system and vital organs, and a potentially pre-cancerous condition. When the scientist tried to alert the public about these alarming discoveries, he lost his job and was silenced with threats of a lawsuit.

Two other studies also showed evidence of a potentially pre-cancerous condition. In an unpublished study, laboratory rats fed a GM crop developed stomach lesions and seven of the forty died within two weeks. The crop was approved without further tests.

The World Health Organization, the British and American Medical Associations, and several other groups have expressed concern that if the "antibiotic resistant marker genes" used in GM foods got transferred to bacteria, it could create super-diseases that are immune to antibiotics.

GM foods are also to blame for the marked increase in food allergies.  Soy allergies skyrocketed by 50% in the UK, coinciding with the introduction of GM soy imports from the U.S.  The number one food marketed to parents and purchased for a baby’s first food (rice cereal) contains soybean oil from genetically-modified soy!

According to a March 2001 report, the Center for Disease Control says that food is responsible for twice the number of illnesses in the U.S. compared to estimates just seven years earlier.

Roundup

Finally, we get to the Roundup.  This is the product many people, companies, and local governments use to keep their lawns, driveways, sidewalks, and parks weed-free.  Interestingly, this product is 70% Agent Orange!  Need I say more?!  The company who produced the illegal warfare chemicals in Vietnam War is the same company from which we are buying products to keep our homes “beautiful.”  Should we really trust the company who has been sued time and time again for toxic exposure and who has been declared the fifth most toxic company with the health of our children?

Many people wonder, “If it’s so dangerous, why would our government allow the sale of lawn chemicals and other horrible products?”  Profit.  Gain.  The Bible says “For the love of money is the root of all evil.” (1 Timothy 6:10)  That is why I have gone in-depth here to describe to you the many products produced by Monsanto and allowed by our government.

During the Agent Orange operation, American soldiers were repeatedly told that this product was not dangerous to work with, despite the studies that showed otherwise.  This is the same government that we trust to decide what we should use on our lawns, what we should feed our family, and what we should take for medicine?  Not when the words “profit” and “gain” are the first priority.

So now you can see how all of this fits into our recent Healthy Lawns topic on Facebook.  We need to get these chemicals as far away from our homes as possible!  As one organization writes, “Our lush, beautiful green lawns are costing us our children!  Too many children are being diagnosed with cancers that are directly linked to lawn chemical exposure.  It’s just not worth it.”

If you watch one video, it should be this one.  Set aside the time you would normally watch a futile sitcom and check it out!  This half-hour long video is a great 60 Minutes type of show that details the use of Agent Orange in Vietnam and the legal battle to obtain remuneration from the American government for the effects of this chemical on the Vietnamese people.

You will notice a striking resemblance between the physical effects of this chemical from Agent Orange and many physical problems/birth defects seen in America for which we are being told have unknown causes.  An excellent video; I highly recommend watching it.
